Cheap, Quick and Delicious – Lentil Salad

It’s Friday! And what does that mean? Right, there’s a new Tafel X prisma recipe for you guys. We hope you enjoyed the first round of recipes so far, but don’t worry, there are yet many more to come… This week it’s a very straight-forward recipe, but, there are  2 reasons why we thought we had to share with you. First, lentils are probably the cheapest protein source you get. Meat is expensive and we feel you. Second, it’s a literally a 10 min recipes, we swear, it will take less time than ordering a pizza from Dominos. So here’s a recipe that’s super cheap, super easy to make and of course, tastes awesome.

Ingredients:

(2 main course portions or 4 when served as a side dish)

1 cup of red lentils1 big, red onion

vegetable broth

2 tomatoes

olive oil & balsamic vinegar to taste

handful of basil leaves

handful of parsley

  1. Chop the onion into smaller cubes and fry in some olive oil. While the onion deglazes in the pot, add the lentils and give it a good stir.
  2. Then, add boiling water and the vegetable broth, let simmer for 6 to 7 minutes. It’s really important that you don’t overcook the lentils, as you want them to be “al dente” as opposed to when you prepare an indian daal, where they are overcooked to the extent that they’re almost mashed up.
  3. When the lentils are done, let them cool down and remove the excess water from the pot.
  4. While the lentils cool down, chop your tomatoes into cubes. Later, add the tomatoes, olive oil and balsamic vinegar to the lentils.
  5. As a last step, garnish with some basil and parsley. Add salt and pepper for taste and enjoy!

Endlich Freitag! Höchste Zeit für ein weiteres Tafel X prisma Rezept. Wir hoffen sehr, dass Euch die bisherigen Rezepte gefallen haben, aber keine Angst, es kommen mehr! Diese Woche teilen wir ein sehr simples Rezept mit Euch, und zwar aus zwei Gründen. Erstens, Linsen sind wahrscheinlich die günstigste Proteinquelle die man kaufen kann. Fleisch ist teuer, wer könnte das besser nachvollziehen als wir Studenten… Zweitens, dieser Linsensalat lässt sich so schnell zubereiten, da seit Ihr schneller als wenn Ihr Euch eine Pizza bei Dominos bestellen würdet. Grund genug deshalb dieses günstiges, schnelles und natürlich super leckere Rezept mit Euch zu teilen.

Zutaten:

(2 Portionen bzw. 4 als Nebengericht serviert)

1 grosse Tasse rote Linsen

1 grosse rote Zwiebel

Gemüsebrühe

2 Tomaten

Olivenöl und Balsamico

1 Handvoll Basilikum

1 Handvoll Petersilie

  1. Würfelt die Zwiebel in kleinere Stücke und bratet sie in der Pfanne mit ein wenig Olivenöl an. Während die Zwiebeln in der Pfanne gläsern werden, gebt die Linsen hinzu und schwitzt diese mit an.
  2. Dann, gebt kochendes Wasser und eine Gemüsebrühe hinzu. Lasst das ganze für 6 bis ca. 7 Minuten köcheln. Passt dabei auf, dass Ihr die Linsen nicht verkocht. Anders als bei einem Indischen Linsen Daal, sollen diese Linsen nämlich ‘”al dente” sein. Wenn die Linsen fertig sind, lasst das restliche Wasser ab und wartet bis sie völlig abgekühlt sind.
  3. Derweilen könnt Ihr die Tomaten in kleine Würfel schneiden.
  4. Wenn alles bereit ist, gebt Ihr die Tomaten den Linsen hinzu, als auch ein wenig Olivenöl und Balsamico.
  5. Zu guter letzt, dekoriert das ganze mit ein wenig frischem Basilikum und Petersilie. Mit Salz und Pfeffer abschmecken, guten Appetit!
